Nothing quite says 'Spring is almost here!' like festival season in Acadiana. I love all the little, and big, festivals in communities all around us that celebrate everything from the humble okra, to jazz, to day lilies. One of my favorites is the 31st annual 'Here's the Beef' Cookoff in Opelousas, coming up on March 6.
