THIBODAUX, La. (AP) — Nicholls State students will be serving up a variety of foods at LeBristro, as part of Chef John Folse Culinary Institute's student-operated restaurant, LeBistro.

Scheduled each Wednesday and Friday until July 27, LeBistro offers a variety of cultural cuisines and serving styles, including Cajun, Creole, American, French and Russian.

Students participating in LeBistro learn about the front and back of the house in a hands-on restaurant environment. From the ambiance to the menu, students make all the crucial decisions pertaining to the restaurant and its service, rotating in leadership roles, preparing different items on the menu and serving guests. All gain experience as the sous chef, pastry chef, maitre d', seating captain, executive chef and servers.

Seating times are 11:30 a.m. to 12:45 p.m., and advance reservations are strongly recommended.
