Chef Patrick Mould joined 'Mornings With Ken and Bernie' for another edition of the NewsJunkie Cafe and he some good news, some not so good news and healthful hints for 'back-to-school'.

 

According to Chef Mould new obesity figures released by the Center for Disease Control are looking up,

The CDC conducted a survey from 2008 to 2011 in forty states analyzing obesity rates and they are dropping.  The bad news is they are not dropping Louisiana....Colorado, Pennsylvania, Tennessee and Louisiana came in number four.

Due to the obesity figures Chef Mould thought it would be good to discuss healthy snack and lunch options for children returning to school this and next week.  Mould said,

Unfortunately if you give the kids the option they'll go straight to the French Fries...You can pack healthy snacks.  What you want to do is identify the healthy items that your kid already likes to eat and focus on those.  The other factor is planning ahead.  Once you've identified what your kids love to eat and stock up on them.  That way you have them ready to go and it's not a big scramble in the morning.

Chef Mould said we all need fat in our diets,

Kids especially because they're going through the growing process so you want to make sure you're not putting fatty foods in their lunch box.  Use a lot of foods low in fat like fruit and vegetables and choose skim or low fat milk.
