After a slow start to the season, the supply of crawfish has picked up nicely for Louisiana Crawfish Boils. Dr Robert Romaire is a crawfish researcher with the LSU Ag Center and he says even though the supply is plentiful, the larger crawfish will be pricey. Romaire says these are the highest consuming times for crawfish in Louisiana. He says even though the crawfish supply has been low this year, the quantity and availability has gone up in the past couple of months. (Most restaurants have been selling boiled crawfish anywhere between 3 to 4 dollars a pound.)
