The question is, what do you do with the leftover "extras" from a crawfish boil?We always add sausage, potatoes and onions when boiling crawfish.  On occasion we add other things like garlic and broccoli as we did this Friday.  To answer obvious questions, yes we had corn but that didn't go into my plans for leftovers and of course there where no leftover crawfish!

Dice the potatoes in half inch chunks, dice the sausage a little smaller, cut the broccoli into 1/2 inch pieces, chop the onions finer and mince a clove or two of the garlic.  Melt some butter in a non-stick pan, add the leftovers to the pan and then add five or six eggs, scrambled.  Layer three or four slices of your favorite cheese. ( I use Swiss ).  Bake at 350 degrees until the eggs are set ( about 12-14 minutes ) then broil until the cheese browns to your liking.  Flip the leftovers/eggs on to a plate, slice and serve.

Like they say about gumbo "first you make a roux" for this you start with a crawfish boil.
